Porcini Sacchetti Sausage Ragu in Spicy Tomato Cream Sauce

Ingredients
- 1 lb. Porcini Sacchetti 25011
- 0.5 lb. Sausage Ground Italian
- 1 Shallot
- 2 Cloves garlic
- 1 Cup Spinach
- 0.5 Cup Tomato crushed
- ¼ Cup Heavy Cream
- ¼ Cup Goat Cheese
- 1 TSP Crushed Red Pepper
- 2 TSP Olive Oil
- Salt & Pepper
Instructions
- Prepare ingredients. Slice shallot, clean spinach, remove sausage from casing if using sausage links, roughly chop garlic.
- Heat a medium sauté pan on medium high heat.
- Add shallots and garlic. After about 1 minute add the ground sausage and crushed red pepper.
- Once the sausage has been cooked through, add the tomato. Let simmer for 5-10 minutes.
- While sauce simmers, bring a pot of water to boil. Cook Sacchetti pasta per instructions, about 3 minutes. Remove from water and set aside.
- Add heavy cream and mix until evenly combined.
- Gently fold Sacchetti into the sausage and tomato sauce.
- In a separate sauté pan, heat olive oil and add spinach. Cook about a minute until spinach is wilted. Season with salt and pepper.
- To plate, lay bed of spinach on a plate. Top with about a cup of the Sacchetti and sausage mixture.
- Sprinkle crumbled goat cheese over top and fresh ground black pepper. Enjoy.
Notes
- This can be done with beef, sausage, or a combination of both.
- Add fresh cut basil or herbs.
