Prepare ingredients. Slice shallot, clean spinach, remove sausage from casing if using sausage links, roughly chop garlic.
Heat a medium sauté pan on medium high heat.
Add shallots and garlic. After about 1 minute add the ground sausage and crushed red pepper.
Once the sausage has been cooked through, add the tomato. Let simmer for 5-10 minutes.
While sauce simmers, bring a pot of water to a boil. Cook Sacchetti pasta per instructions, about 3 minutes. Remove from water and set aside.
Add heavy cream and mix until evenly combined.
Gently fold Sacchetti into the sausage and tomato sauce.
In a separate sauté pan, heat olive oil and add spinach. Cook about a minute until spinach is wilted. Season with salt and pepper.
To plate, lay bed of spinach on a plate. Top with about a cup of the Sacchetti and sausage mixture.
Sprinkle crumbled goat cheese over top and fresh ground black pepper. Enjoy.
