Kimchi Noodle Stir-fry

Ingredients
- 8 oz Spaghetti Chitarra Nests 16108
Sauce:
- 2 TBSP Soy Sauce
- 2 TBSP Honey
- 1 TBSP Rice Vinegar
- 1 TBSP Gochujang
- 1 TSP Fish Sauce
- 1 TSP Sesame Oil
Stir-Fry:
- 1 TBSP Canola Oil
- 1 Shallot thin sliced
- 3 Cloves Garlic thin sliced
- 1 Red Bell Pepper sliced
- ½ Cup Purple Cabbage sliced
- ½ Cup Shitake Mushrooms sliced
- ¼ Cup Matchstick Carrots
- ½ Cup Kimchi roughly chopped
Garnish:
- 1 TSP Sesame Seeds
- 1 TBSP Green Onion sliced
- ¼ Cup Bean Sprouts
Instructions
- In a small bowl, combine all sauce ingredients together and mix until evenly blended, set aside.
- Bring a large pot of water to a boil. Cook spaghetti nests per directions, for about 1.5 minutes. Remove from water and quickly cool in cold water. Drain and set aside. In a medium sauté pan, heat canola oil on medium to high heat.
- Add shallots and mushrooms and sauté for about 1 minute. Add garlic, peppers, cabbage, kimchi and carrots and sauté for another 2 minutes.
- Add the noodles and the sauce mixture to the pan. Continue to mix all ingredients until heated through and sauce started to thicken and coat the noodles.
- To plate, portion onto plates and garnish with sesame seeds, green onion and bean sprouts.
Notes
- Add any protein you like, chicken, shrimp, or even fried tofu.
- Swap any vegetables for other season vegetables such as snap peas, other peppers or zucchini.
- Use sugar, agave, or syrup in place of honey if desired.
