Kimchi Noodle Stir-fry

Ingredients
  

  • 8 oz Spaghetti Chitarra Nests 16108

Sauce:

  • 2 TBSP Soy Sauce
  • 2 TBSP Honey
  • 1 TBSP Rice Vinegar
  • 1 TBSP Gochujang
  • 1 TSP Fish Sauce
  • 1 TSP Sesame Oil

Stir-Fry:

  • 1 TBSP Canola Oil
  • 1 Shallot thin sliced
  • 3 Cloves Garlic thin sliced
  • 1 Red Bell Pepper sliced
  • ½ Cup Purple Cabbage sliced
  • ½ Cup Shitake Mushrooms sliced
  • ¼ Cup Matchstick Carrots
  • ½ Cup Kimchi roughly chopped

Garnish:

  • 1 TSP Sesame Seeds
  • 1 TBSP Green Onion sliced
  • ¼ Cup Bean Sprouts

Instructions
 

  • In a small bowl, combine all sauce ingredients together and mix until evenly blended, set aside.
  • Bring a large pot of water to a boil. Cook spaghetti nests per directions, for about 1.5 minutes. Remove from water and quickly cool in cold water. Drain and set aside. In a medium sauté pan, heat canola oil on medium to high heat.
  • Add shallots and mushrooms and sauté for about 1 minute. Add garlic, peppers, cabbage, kimchi and carrots and sauté for another 2 minutes.
  • Add the noodles and the sauce mixture to the pan. Continue to mix all ingredients until heated through and sauce started to thicken and coat the noodles.
  • To plate, portion onto plates and garnish with sesame seeds, green onion and bean sprouts.

Notes

  • Add any protein you like, chicken, shrimp, or even fried tofu.
  • Swap any vegetables for other season vegetables such as snap peas, other peppers or zucchini.
  • Use sugar, agave, or syrup in place of honey if desired.
