Kimchi Noodle Stir-fry

- 8 oz Spaghetti Chitarra Nests 16108
Sauce:
- 2 TBSP Soy Sauce
- 2 TBSP Honey
- 1 TBSP Rice Vinegar
- 1 TBSP Gochujang
- 1 TSP Fish Sauce
- 1 TSP Sesame Oil
Stir-Fry:
- 1 TBSP Canola Oil
- 1 Shallot thin sliced
- 3 Cloves Garlic thin sliced
- 1 Red Bell Pepper sliced
- ½ Cup Purple Cabbage sliced
- ½ Cup Shitake Mushrooms sliced
- ¼ Cup Matchstick Carrots
- ½ Cup Kimchi roughly chopped
Garnish:
- 1 TSP Sesame Seeds
- 1 TBSP Green Onion sliced
- ¼ Cup Bean Sprouts
In a small bowl, combine all sauce ingredients together and mix until evenly blended, set aside.
Bring a large pot of water to a boil. Cook spaghetti nests per directions, for about 1.5 minutes. Remove from water and quickly cool in cold water. Drain and set aside. In a medium sauté pan, heat canola oil on medium to high heat.
Add shallots and mushrooms and sauté for about 1 minute. Add garlic, peppers, cabbage, kimchi and carrots and sauté for another 2 minutes.
Add the noodles and the sauce mixture to the pan. Continue to mix all ingredients until heated through and sauce started to thicken and coat the noodles.
To plate, portion onto plates and garnish with sesame seeds, green onion and bean sprouts.
- Add any protein you like, chicken, shrimp, or even fried tofu.
- Swap any vegetables for other season vegetables such as snap peas, other peppers or zucchini.
- Use sugar, agave, or syrup in place of honey if desired.
