Cheese Tortellini Breakfast Bacon Bowl

Ingredients
- 1 Lb Cheese Tortellini 81701
- ½ Red Pepper
- 3 Hard Boiled Eggs
- ½ Lb Bacon, raw
- Bunch of Chives
- Salt & Pepper
Instructions
- Prepare Ingredients: Chop red pepper into ¼" pieces. Remove hard boiled eggs from shell, cut into slices. Roughly chop chives.
- Bring water to low boil. Cook tortellini for approx. 3 minutes. Drain and set aside.
- In a medium sauté pan, cook bacon until crisp. Remove from pan and reserve 2 Tbsp of remaining bacon fat. Crumble the bacon.
- In a separate pan, add the 2 Tbsp of bacon fat and sauté the red pepper.
- Once the red pepper is tender add in the cooked tortellini and chives. Cook until tortellini is warm.
- Fold in the sliced egg pieces, crumbled bacon and season with salt and pepper.
- To plate, scoop mixture into a bowl and top with additional chives.
Notes
- This is a simple but hearty breakfast that can be eaten on the go in a bowl.
- Best served warm but could be eaten cold.
- Try using other veggies such as green pepper, spinach or asparagus.
