Instructions
Prepare Ingredients: Chop red pepper into ¼" pieces. Remove hard boiled eggs from shell, cut into slices. Roughly chop chives.
Bring water to a low boil. Cook tortellini for approx. 3 minutes. Drain and set aside.
In a medium sauté pan, cook bacon until crisp. Remove from pan and reserve 2 Tbsp of remaining bacon fat. Crumble the bacon.
In a separate pan, add the 2 Tbsp of bacon fat and sauté the red pepper.
Once the red pepper is tender add in the cooked tortellini and chives. Cook until tortellini is warm.
Fold in the sliced egg pieces, crumbled bacon and season with salt and pepper.
To plate, scoop mixture into a bowl and top with additional chives.
Notes
This is a simple but hearty breakfast that can be eaten on the go in a bowl.
Best served warm but could be eaten cold.
Try using other veggies such as green pepper, spinach or asparagus.
