Angel Hair Watermelon Cucumber Salad

Ingredients
  

  • 0.5 lb. Angel Hair Nests 04108
  • 2 TBSP Honey
  • 2 TBSP Lime Juice
  • 2 TBSP Sunflower Oil
  • ½ Watermelon peeled, 1” cubed
  • 1 English Cucumber ½” cubed
  • ~15 Mint leaves roughly chopped
  • ~15 Basil leaves roughly chopped
  • ½ Cup Crumbled Feta
  • Salt & Pepper

Instructions
 

  • Gather and prepare ingredients.
  • Make the dressing: In a bowl, whisk together the honey, lime, oil, and pinch of salt & pepper.
  • Bring a large stock pot of water to boil. Cook angel hair pasta per direction, about 1 minute. Drain, cool under running cold water. Set it aside.
  • In a large bowl mix the watermelon, cucumber and herbs. Fold in the pasta along with the dressing and mix until evenly coated. Gently fold in the feta.
  • Serve in a large serving bowl or platter and top with additional feta if desired.

Notes

  • This can be made in advance for a summer cookout.
  • Best served cold.
  • Make additional dressing and add just before serving to keep the salad fresh.
  • Dryer feta will hold its shape better, soft feta will tend to melt down into the salad
