0.5lb.Angel Hair Nests04108
2TBSPHoney
2TBSPLime Juice
2TBSPSunflower Oil
½Watermelonpeeled, 1” cubed
1English Cucumber½” cubed
~15Mint leavesroughly chopped
~15Basil leavesroughly chopped
½CupCrumbled Feta
Salt & Pepper
Instructions
Gather and prepare ingredients.
Make the dressing: In a bowl, whisk together the honey, lime, oil, and a pinch of salt & pepper.
Bring a large stock pot of water to a boil. Cook angel hair pasta per direction, about 1 minute. Drain, cool under running cold water. Set it aside.
In a large bowl mix the watermelon, cucumber and herbs. Fold in the pasta along with the dressing and mix until evenly coated. Gently fold in the feta.
Serve in a large serving bowl or platter and top with additional feta if desired.
Notes
This can be made in advance for a summer cookout.
Best served cold.
Make additional dressing and add just before serving to keep the salad fresh.
Dryer feta will hold its shape better, soft feta will tend to melt down into the salad
