Cheese Ravioli with Lemon Corn Basil

Ingredients
  

  • 12 oz Cheese Ravioli 43321
  • 1 TBSP Canola Oil
  • 2 TBSP Butter
  • ½ Fire Roasted Corn
  • 1 Shallot sliced
  • 1 Roma Tomato roughly chopped
  • 1 Fresh Basil bunch
  • ¼ Cup Dry White Wine
  • 1 Clove Garlic roughly chopped
  • Salt
  • Fresh Cracked Black Pepper

Instructions
 

  • Gather and prepare ingredients. Roughly chop 2 TBSP fresh basil, set aside.
  • Bring a large pot of water to a boil. Cook pasta per instructions for about 4 minutes. Remove from water and drain, set aside.
  • Heat oil in a large sauté pan on medium/high heat. Cook shallot and garlic until fragrant, for about 2-3 minutes.
  • Add chopped tomato and corn. Cook until tomatoes start to break down. Add wine and deglaze.
  • Add the butter and melt into sauce. Fold in ravioli and chopped basil, gently mix until evenly coated.
  • To plate, place 4-5 ravioli per plate along with corn and tomato sauce from the pan and top with additional basil and fresh cracked black pepper.

Notes

  • Add asparagus for more green color and vegetables.
  • Try heirloom tomatoes or sliced cherry tomatoes.
  • Add grilled shrimp or chicken.
