
Cheese Ravioli with Lemon Corn Basil

Ingredients
- 12 oz Cheese Ravioli 43321
- 1 TBSP Canola Oil
- 2 TBSP Butter
- ½ Fire Roasted Corn
- 1 Shallot sliced
- 1 Roma Tomato roughly chopped
- 1 Fresh Basil bunch
- ¼ Cup Dry White Wine
- 1 Clove Garlic roughly chopped
- Salt
- Fresh Cracked Black Pepper
Instructions
- Gather and prepare ingredients. Roughly chop 2 TBSP fresh basil, set aside.
- Bring a large pot of water to a boil. Cook pasta per instructions for about 4 minutes. Remove from water and drain, set aside.
- Heat oil in a large sauté pan on medium/high heat. Cook shallot and garlic until fragrant, for about 2-3 minutes.
- Add chopped tomato and corn. Cook until tomatoes start to break down. Add wine and deglaze.
- Add the butter and melt into sauce. Fold in ravioli and chopped basil, gently mix until evenly coated.
- To plate, place 4-5 ravioli per plate along with corn and tomato sauce from the pan and top with additional basil and fresh cracked black pepper.
Notes
- Add asparagus for more green color and vegetables.
- Try heirloom tomatoes or sliced cherry tomatoes.
- Add grilled shrimp or chicken.
