Instructions
Gather and prepare ingredients. Roughly chop 2 TBSP fresh basil, set aside.
Bring a large pot of water to a boil. Cook pasta per instructions for about 4 minutes. Remove from water and drain, set aside.
Heat oil in a large sauté pan on medium/high heat. Cook shallot and garlic until fragrant, for about 2-3 minutes.
Add chopped tomato and corn. Cook until tomatoes start to break down. Add wine and deglaze.
Add the butter and melt into sauce. Fold in ravioli and chopped basil, gently mix until evenly coated.
To plate, place 4-5 ravioli per plate along with corn and tomato sauce from the pan and top with additional basil and fresh cracked black pepper.
Notes
Add asparagus for more green color and vegetables.
Try heirloom tomatoes or sliced cherry tomatoes.
Add grilled shrimp or chicken.
