Cheese Sacchetti Strawberry Balsamic Salad

Ingredients
- 8 oz Cheese Sacchetti 25007
- 2 Cups Baby Spinach packed
- 1 Cup Strawberry fresh, quartered
- ½ Shallot thinly sliced
- ½ Cup Walnuts roasted, roughly chopped
- ½ Cup Feta Cheese crumbled
- Balsamic Honey Dressing **recipe below
- 1 TBSP Mint roughly chopped
- Salt & Pepper
Balsamic Honey Dressing:
- ¼ Cup Olive Oil
- 3 TBSP Balsamic Vinegar
- 2 TBSP Honey
- ½ TSP Dijon Mustard
- ½ TSP Salt
- ½ TSP Pepper
Instructions
- Gather and prepare ingredients.
- Bring a large pot of water to boil. Cook pasta per instructions, for about 3 minutes. Remove from water and drain, set aside.
- In a bowl, gently mix spinach, strawberries, shallot, walnuts, mint, half the feta cheese, and Sacchetti with 3 TBSP of the dressing. Mix until coated.
- To plate, evenly divide mixture onto plate. Top with additional feta cheese and another drizzle of balsamic honey dressing.
Next Step is for the Balsamic Honey Dressing:
- Mix until evenly combined. Store under refrigeration.
Notes
- Use pecans, almonds or other nuts in place of walnuts.
- Add other dried or fresh fruit such as blueberries.
- Swap feta for goat cheese.
