Potato Gnocchi Mixed Berry Dumplings

Ingredients
  

  • 1-1.5 Lb. Potato Gnocchi thawed (24327)
  • 2.5 Cups Berries blackberry, blueberry, raspberry
  • 1 Cup Water
  • ½ Cup Sugar
  • ½ TSP Cinnamon
  • 1 TBSP Lemon Juice
  • Bunch of Mint
  • Vanilla Ice Cream

Instructions
 

  • Let frozen gnocchi sit out and mostly thaw.
  • In a medium saucepan add the berries, water, sugar, cinnamon, and lemon juice.
  • Bring berries to simmer and allow berries to start to break down.
  • Place the thawed gnocchi into the berry sauce and gently mix once. Cover, allow to simmer on low for 5-6 minutes. Remove cover and simmer an additional 5-6 minute until gnocchi are cooked and sauce is thickened.
  • To plate, scoop desired amount onto plate, top with a scoop of ice cream and sprig of mint.

Notes

  • Use any berries you like or that are in season.
  • Alternatively, you could deep fry the gnocchi and spoon berry sauce over the top.
  • Use whipped cream in place of ice cream.
  • Try different toppings such as shaved dark chocolate or powdered sugar.
