Cheese Tortelloni with Zucchini & Summer Squash
Using our Cheese Tortelloni you can create fabulous dishes. SKU #22221
Ingredients
- 1 lb. Cheese Tortelloni 22221
- 1 Medium Zucchini
- 1 Medium Yellow Squash
- 1 Small Onion
- 2 Cloves Garlic
- ¼ Cup Butter
- ¼ Cup Parmesan Cheese
- Fresh Basil & Parsley
- Salt & Pepper
Instructions
- Gather and prepare ingredients: Slice zucchini and squash, dice onion ½”, roughly chop garlic, roughly chop basil and parsley.
- Bring a large sauce pot to boil. Add Cheese Tortelloni to the pot and cook per instructions, about 2.5 minutes. Remove from heat and set aside.
- In a medium sauté pan, melt butter. Once melted add the onion, zucchini, squash & garlic. Sauté vegetables for about 5-8 minutes, stirring occasionally until vegetables start to become tender but still crisp. Season with salt & pepper.
- To the sauté pan, add the cooked Tortelloni and gently toss in mixture.
- Remove from the heat, add parmesan cheese and basil.
- To plate, scoop desired amount onto plate, top with additional cheese and parsley.
Notes
- You can use any other vegetables that are in season, such as cherry tomato, asparagus, broccoli.
- Splash alfredo sauce in at the end for a richer creamier sauce.
- Instead of butter use several TBSP of olive oil for healthier fat option.
