Gather and prepare ingredients: Slice zucchini and squash, dice onion ½”, roughly chop garlic, roughly chop basil and parsley.
Bring a large sauce pot to a boil. Add Cheese Tortelloni to the pot and cook per instructions, about 2.5 minutes. Remove from heat and set aside.
In a medium sauté pan, melt butter. Once melted add the onion, zucchini, squash & garlic. Sauté vegetables for about 5-8 minutes, stirring occasionally until vegetables start to become tender but still crisp. Season with salt & pepper.
To the sauté pan, add the cooked Tortelloni and gently toss in mixture.
Remove from the heat, add parmesan cheese and basil.
To plate, scoop desired amount onto plate, top with additional cheese and parsley.
