Laksa Angel Soup

Ingredients
  

  • 3-4 Angel Hair Nests 04108

Broth:

  • 3 Cups Hearty Chicken Stock
  • 1 Tbl Vegetable Oil
  • 1" Cut Ginger grated
  • 2 Cloves Garlic finely chopped
  • 1 Stalk Lemongrass white part grated, about 1 TBL
  • ½ Cup Laksa Paste
  • 14 Oz Coconut Milk
  • 2 Tsp Fish Sauce
  • ½ Cup Shredded Chicken or Whole Shrimp

Chili Sauce:

  • 1 Tsp Sugar
  • 1 1/2 Tsp Soy Sauce
  • 1/2 Clove Garlic grated
  • 1 1/2 Tsp Laksa Paste
  • 1 Tbl Sriracha
  • 1 Tbl Chili Paste
  • 1 Tbl Vegetable Oil

Toppings:

  • Bean Sprouts
  • Cilantro
  • Lime
  • Fried Tofu Puffs

Instructions
 

  • Gather all ingredients. In a small bowl, combine all Chili Sauce ingredients. Mix well, set aside.
  • In a medium sized sauce pot, heat 1 TBL vegetable oil on medium high heat.
  • Once hot, sauté the garlic, ginger, lemongrass for about a minute. Add the ½ C laksa paste and continue mixing for another 2-3 minutes.
  • Add the chicken stock, coconut milk, fish sauce, and 2 Tsp of the laksa chili sauce. Bring to a low simmer. Add chicken or shrimp to the broth to heat up.
  • Noodles: Bring a medium sauce pot to boil. Add Angel Hair pasta to water and cook for about 1.5 minutes. Drain. Set it aside.
  • Serving: In a large soup bowl, place the noodles into bowl. Ladle broth over noodles. Add slices of lime, bean sprouts, tofu puffs and other toppings you desire. Enjoy.

Notes

  • Laksa paste is used in traditional Laksa Soup and has notes of coconut, lemongrass, garlic, shrimp, and sweet notes. You can find Laksa paste in Asian supermarkets on online grocers. Popular in Malaysian and Southeast Asia.
  • Fried Tofu Puffs can also be found at local Asian supermarket. If unable to find, you can buy extra firm tofu, cut into 1” pieces and fry in oil yourself. Fried tofu puffs are also a staple for this dish.
