Potato Gnocchi Breakfast Bake
Make this versatile breakfast bake using our Potato Gnocchi. SKU #24327
Ingredients
- 1 Lb Potato Gnocchi 24327
- 1 Cup Fresh Spinach
- ½ Onion diced
- ½ Red Pepper diced
- ¼ Cup Diced Ham *See notes below
- ½ Cup Shredded Cheese (cheddar or blend)
- ½ Cup Hollandaise Sauce
- 1-2 Eggs per portion *See notes below
Instructions
- Gather ingredients.
- Heat fryer to 350° F. From frozen, place gnocchi in fryer oil, cook for 2-3 minutes, until gnocchi is golden brown on outside.
- Remove gnocchi from oil and place on paper-lined plate to allow excess oil to drain. Set aside.
- In a medium sauté pan,cook onion and red pepper until tender. At the end, add in spinach for about 30 seconds until spinach starts to wilt. Remove from heat.
- In a large mixing bowl, combine fried gnocchi, sautéed vegetables, ham and half the cheese. Mix until evenly combined.
- Place mixture into a cast iron skillet or baking dish. Top with remaining cheese.
- Bake in oven for about 15 minutes until warm and cheese is melted on top.
- To plate, scoop from baking dish or skillet onto plate. Serve with Hollandaise sauce over top or on the side. Top with an egg of your choice. *See notes below.
Notes
- This can be served as a finished breakfast plate topped with a sunny side up or fried egg. Or serve it as a quick bowl and add scrambled egg to make it easy for on the go.
- Instead of ham, try sausage crumbles, bacon or turkey sausage.
