Latin Tortellini Salad with Avocado Lime Dressing
Try this new Latin inspired dish for a side or main course. It is delicious! SKU# 81701
Ingredients
Salad:
- 1 lb Cheese Tortellini 81701
- ½ Orange Pepper
- ½ Cup Cherry tomatoes
- ½ Cup Corn
- ½ Cup Black Beans cooked
- ¼ Cup Cotija Cheese
- ½ Small Red Onion
- 2 TBL Scallions
- Chopped Cilantro garnish
- Salt & Pepper
Dressing:
- 1 Avocado
- 1/4 Cup Sour Cream
- 1/4 Cup Cilantro
- 1 Lime juiced
- 2 TBL Vinegar (white or red)
- 3 TBL Canola Oil
- 1/4-1/2 Cups Water
- 1 TBL Cumin
- Salt & Pepper
Instructions
Dressing:
- Using a food processor or blender, combine: Contents of 1 avocado, pit removed, sour cream, cilantro, juice of 1 lime, vinegar, canola oil, & cumin.
- Blend until smooth and creamy. While blending, add water to reach desired consistency. The more water the thinner it will get. Less water will be creamier.
- Adjust seasonings, salt & pepper. Set aside, refrigerate.
Salad:
- Prepare vegetables: Slice tomatoes into quarters, cut onion and pepper into ¼” – ½” pieces. Roughly chop scallions and cilantro.
- Prepare pasta: Cook tortellini in boiling water per instructions, about 3.5 minutes. Immediately cool under cold water. Set aside.
- In a bowl, combine peppers, onion, tomato, corn, black beans, tortellini.
- Add about ½ Cup of the avocado dressing and mix. Add more dressing until all is covered evenly when mixed.
- Top with chopped cilantro, scallions and cotija cheese.
Notes
- You could also use a cilantro lime vinaigrette if you prefer a lighter dressing.
- For corn, use canned or frozen. For even more flavor use fire roasted corn.
- This makes a great side, or make it a complete meal with grilled shrimp, grilled chicken, or steak.
