Cheese Tortellini with Roasted Tomato Basil Cream

Ingredients
- 1 lb. Cheese Tortellini 81701
- 1 lb. Cherry Tomatoes
- ½ Cup Marinara Sauce
- ¼ Cup Heavy Cream
- 2 TBSP Olive Oil
- 1 TBSP Fresh Basil roughly chopped
- ¼ Cup Fresh Parmesan Cheese
- 2 TBSP Pesto optional
Instructions
- Roast Tomatoes: Preheat oven to 450F. In a bowl, mix cherry tomatoes and 1 TBSP of olive oil. Evenly spread-out tomatoes on a baking sheet. Once oven reaches 450F, put the pan of tomatoes in and cook for about 10-15 minutes. Tomatoes will be done once the outside skin starts to blister and break. Remove from oven and let rest.
- Bring a large pot of water to boil. Boil tortellini per instructions, for about 3 minutes. Drain and set aside.
- In a medium sauté pan add the remaining 1 TBSP of oil and roasted cherry tomatoes. Bring to medium heat. Add the marinara sauce. Once sauce starts to warm, add the heavy cream and fresh basil. Mix until evenly blended.
- Once sauce has come up to temperature, fold in the tortellini and mix until evenly coated.
- Plate and top with more fresh basil and fresh parmesan cheese
Notes
- Optional: Toss the tortellini in Basil Pesto before adding to sauce. This will give a bright basil pesto flavor to the overall dish.
