Beef Ravioli Stuffed Peppers

Ingredients
- 9 oz Beef Ravioli- about 3pc/pepper 43328
- 3 x Bell Peppers - about 1pc/person
- 2-3 Cups Marinara Sauce 55020
- ½ Cup Ricotta
- ½ Cup Mozzarella
- 1.5 TBSP Oregano
- 1 Cup Mozzarella/Cheddar Blend
- Parsley
Instructions
- Gather and prepare ingredients. Preheat oven to 375F.
- Carefully slice the top of each pepper off and remove the core and seeds of the pepper.
- Place the peppers on a baking dish and bake about 10-15 minutes until the pepper starts to soften a bit. Once softened, remove from the oven and set aside.
- Meanwhile, bring a large pot of water to boil and cook ravioli per instructions, about 3.5 minutes. Remove from water and set aside.
- In a bowl, combine 1 cup of marinara, ricotta, mozzarella, and oregano.
- To assemble, in each pepper, layer 1 TBSP marinara mixture then 1 ravioli, top with more marinara mixture. Repeat with about 3 ravioli per pepper. Top with the mozzarella cheddar cheese blend.
- In a baking dish, put a cup or so marinara on the bottom and put the peppers in the baking dish. Cook for about 15-20 minutes or until inside peppers reach 165F and top is bubbly golden brown.
- To plate, evenly divide about 1-1.5 pepper per plate garnish with parsley and more cheese.
Notes
- Serve with fresh vegetables or side salad.
- A great complete meal that can be made in advance and reheated in oven for quick service.
