Shrimp & Garlic Ravioli with Grilled Shrimp Skewers

Ingredients
  

  • 5-6 Shrimp & Garlic Ravioli 34387
  • 1 Shallot sliced
  • 2 Cloves Garlic sliced
  • 1 Roma Tomato roughly chopped
  • ΒΌ Cup White Wine
  • 4 TBSP Butter
  • 2 TBSP Lemon Juice
  • 2 TBSP Fresh Parsley
  • Salt & Pepper

Shrimp Skewers:

  • 12 Medium/Large Shrimp about 3/person, raw, peeled
  • 1 Clove Garlic
  • 1 TSP Fresh Thyme
  • 1 TBSP Veg Oil
  • 2 TSP Lemon Juice
  • Salt & Pepper

Instructions
 

  • Prepare shrimp skewers. Preheat grill. Roughly chop garlic and combine with thyme, oil, lemon juice, and pinch of salt and pepper. Mix in shrimp and let marinate while preparing the rest of the dish.
  • Bring a large pot of water to boil.
  • While water is coming to a boiling, melt 4 TBSP butter. Add garlic and shallots and cook for approx. 2-3 minutes.
  • Add the tomatoes and cook another 2 minutes. Add lemon juice and white wine. Allow to cook another 2 minutes.
  • Skewer shrimp and grill on each side for about 2-3 minutes until shrimp are fully cooked. Set it aside.
  • Cook ravioli per instructions, for about 3-3.5 minutes. Immediately toss into butter and garlic mixture.
  • To plate, place ravioli on plate and top with fresh parsley. Add a shrimp skewer to each plate. Add additional lemon juice over top. Enjoy.

Notes

  • For another layer of flavor, while the grill is on from the shrimp, grill and lightly char the lemon before squeezing to get a little smokey flavor.
  • You could add other seafood to this including scallops or clams.
