Ingredients

  • 1-2 Pasta Sheets 09205
  • 1 Cup Pulled Pork prepared
  • ½ Cup Black Beans prepared
  • 1 Cup Salsa
  • ½ Cup Brined Jalapenos
  • ¾ Cup Shredded Cheese
  • ½ Cup Corn
  • 1 Avocado
  • Scallion, garnish

Instructions

  • Lay out pasta sheets in a single layer, allow to partially thaw, about 15-20 minutes at room temperature.
  • Cut pasta sheets into desired chip shape. Ideally, 2 x 2 squares, then cut once diagonally to make triangles. Set it aside
  • Prepare other ingredients and toppings. Heat pulled pork, gather black beans, cheese, salsa & corn. For the avocado, dice and set aside, or mash and add seasoning for guacamole on the side.
  • Heat fryer oil to 375° F. Gently add the cut pasta sheets to hot oil and cook until golden brown and crisp. This will only take a few seconds, don't walk away. Once fried, set aside on paper towels to absorb excess oil.
  • Assembly: Layer chips, cheese, corn, black beans, pulled pork and jalapeno. Be sure to evenly layer the chips and toppings to evenly cover the chips.
  • Add additional cheese on top, broil in oven to melt cheese if desired. Garnish with sliced scallions.
  • Enjoy with salsa and guacamole.

Notes

  • Instead of pulled pork, try pulled chicken, chili or grilled vegetables for a vegetarian option.
  • Pasta sheets make great chips for any occasion, try with hummus or other dips. Dust with powdered sugar and dip in chocolate spread for a dessert option.
  • Add grilled chicken or shrimp and make it a complete meal.
