Lobster Ravioli Bake

Ingredients
  

Lobster Bake:

  • 1.5 lbs. Maine Lobster Ravioli 44228
  • 2 Ears of Corn
  • 1 lb. Andouille Sausage
  • 1 lb. Mini Potatoes or Fingerling
  • 4 TBSP Butter
  • 2 TBSP Old Bay Seasoning
  • 1 Lemon

Lobster Salad:

  • ½ lb. Lobster Meat cooked
  • 2 TBSP Mayonnaise
  • ¼ Cup Celery ¼” diced
  • 1 TSP Lemon Juice
  • Salt & Pepper

Instructions
 

  • Preheat oven to 350F.
  • Prepare ingredients. Cut corn on cob into 2” chunks. Slice andouille sausage into 1/2” coins.
  • Make lobster salad. Combine all lobster salad ingredients. Gently fold until all are evenly mixed. Set aside in refrigerator to keep cool.
  • Bring a large pot of water to boil. Add potatoes, cook for about 10 minutes. After about 10 minutes, add the corn and cook an additional 5 minutes until both corn and potatoes are cooked through.
  • Take a 9x13 sheet pan and place the corn, potatoes, & andouille sausage. Melt 2 TBSP butter and combine with 1 TBSP of Old Bay Seasoning, pour over the ingredients on sheet pan. Cover with tinfoil and put in preheated oven.
  • While the sheet pan is in the oven, bring another pot of water to boil. Cooked ravioli per instructions, about 3-3.5 minutes.
  • When cooked, toss ravioli in the remaining 2 TBSP butter and 1 TBSP Old Bay Seasoning.
  • To plate, combine ravioli and sheet pan ingredients and layer on plate. Top with the cold lobster salad and a squeeze of lemon. Enjoy.

Notes

  • This makes a great family style platter and can serve several people at once.
  • Serve with fresh toasted loaf of bread.
  • Great for the outdoors during a summer cookout.
