White Wine Orange Crab Pappardelle

Instructions
Finely chop shallot and jalapeno. Juice the orange. Zest about 1 tsp of the orange zest. Set aside.
Heat olive oil on medium heat. Saute shallot and jalapeno.
Reduce to medium-low heat and add the crab meat.
While the crab meat heats up, bring pasta water to a boil in a large pot.
Add the orange juice, zest and white wine to the pan with the crab. Bring to a low simmer.
Once the pasta water is boiling add the Pappardelle nests and cook about 1-1½ minutes. Drain.
Add the Pappardelle to the crab mixture and toss for a minute or so until well incorporated.
To plate, use tongs to place on plate. Top with fresh chopped parsley and additional orange zest.
Notes
Add crushed red pepper to make even spicier and add some color.
