Gather ingredients.
Heat fryer to 350° F. From frozen, place gnocchi in fryer oil, cook for 2-3 minutes, until gnocchi is golden brown on outside.
Remove gnocchi from oil and place on paper-lined plate to allow excess oil to drain. Set aside.
In a medium sauté pan,cook onion and red pepper until tender. At the end, add in spinach for about 30 seconds until spinach starts to wilt. Remove from heat.
In a large mixing bowl, combine fried gnocchi, sautéed vegetables, ham and half the cheese. Mix until evenly combined.
Place mixture into a cast iron skillet or baking dish. Top with remaining cheese.
Bake in oven for about 15 minutes until warm and cheese is melted on top.
To plate, scoop from baking dish or skillet onto plate. Serve with Hollandaise sauce over top or on the side. Top with an egg of your choice. *See notes below.
