Instructions
Gather all ingredients. Shred cabbage. Cut onion into ½”. Cut bacon into ½” pieces. Roughly chop garlic.
Heat a large pot, preferable a large Dutch oven, render the bacon until pieces are crispy. Remove crispy pieces from pan and set aside.
In the same pan on medium heat, sauté onion in bacon fat, about 5 minutes.
Add the cabbage and continue to cook until cabbage starts to become tender. Add back in the bacon. Add the garlic. Cook for another 2-3 minutes.
While cabbage mixture is cooking, bring a large pot of water to boil. Cook pappardelle nets per instructions, about 1-2 minutes.
Add 2 TBL of butter and cooked pasta to the cabbage pan and mix until evenly coated and butter is melted.
Plate and top with any additional bacon bits, black pepper and parsley. Enjoy.
Notes
This makes a great quick and easy meal by itself or serve with a grilled steak or chicken.
Adjust with salt and fresh cracked pepper. Cabbage has a mild flavor; it is good to get a nice golden sauté on the onions and cabbage to bring out all the flavor.
