Instructions
Gather and prepare ingredients. Roughly chop garlic. Rinse kale, roughly chop into 1” pieces. Slice shallot.
Bring a large pot of water to a boil, cook gnocchi per instructions, about 3 minutes. Remove from water and set aside.
Melt 1 TBSP butter in a large sauté pan. Lightly sauté garlic and shallots until fragrant. Add the kale until wilted.
Add remaining TBSP butter and cooked gnocchi to the pan and toss until evenly mixed. Season with salt and pepper.
To plate, pair with your favorite entrée protein and top with freshly cut green onion. Enjoy.
Notes
This is a modern twist on a popular Irish dish Colcannon. Traditionally made with mashed potatoes and cabbage simply.
This dish makes a great side to any St Patrick’s Day meal.
Serve alongside corned beef, lamb, or at breakfast with Irish bangers.
