Prepare ingredients. Cut onion, carrot, and zucchini into ½” dice. Roughly chop garlic. Gather and combine all spices.
Add oil to a large sauce pot, heat on medium high heat. Sautee onion and carrot for about 5 min. Add zucchini and cook another 5 min, until carrots start to become tender.
In the same pot add the ground beef and spices. Cook until ground beef is cooked through and no longer pink.
Once beef is cooked through, add the tomato and water and simmer uncovered for about 30 minutes.
While the sauce is simmering, bring a large pot of water to boil. Cook pasta nests per instructions, about 1.5 minutes. Drain. Set it aside.
When ready, combine the beef mixture and the pasta together. Place in an oven ready dish. Cover with mozzarella cheese.
Bake at 350 for about 15-20 minutes until cheese is melted and golden.
Plate and top with any additional cheese and parsley. Enjoy.
